Crustless Vegetable and Cheese quiche

Crustless Vegetable and Cheese Quiche

Ingredients
  • 3 large eggs
  • 2 tablespoons all purpose flour
  • 1 tablespoon of dijon mustard
  • 1 cup evaporated milk
  • Salt and pepper to taste
  • 2 Sliced Italian Tomato
  • 1 yellow pepper
  • 1 onion
  • ½ cup spinach
  • ½ cup mozzarella.
  • Garnish:
  • ½ teaspoon parsley flakes
  • ½ teaspoon onion powder.
Instructions
  1. Preheat oven to 350 F
  2. Heat the oil in a frying pan and sauté the onion, pepper and spinach until tender. Let cool
  3. Beat eggs, flour and dijon mustard until smooth. Add milk, cheese, salt, pepper and vegetables, mix well
  4. Pour into a greased ovenproof dish
  5. Arrange the tomato slices on top.
  6. Filling: Combine the ingredients and sprinkle over the tomatoes.
  7. Put in the center of the oven to cook for 35 to 40 minutes.
