Delicious Homemade Tomato Sauce !

Happy Sunday everyone! Here in Montreal the intense heat is finally behind us, at least I hope! When the beautiful cool days of autumn settle, I love spending time in the kitchen preparing recipes with the multitude of vegetables available during the fall season.




Today I’m cooking my tomato sauce made with beautiful freshly picked plum tomatoes. It is really delicious, you can eat just Iike this on pasta, but it also serves me as my base for my vodka sauce, my pizza sauce or other tomato-based sauces.

Is you like you can also freeze it, it will last all winter ! I put it in a Ziploc freezer bag on the side so it does’nt take to much space once it’s frozen.

Ingredients

Instructions
  1. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, about 8 minute.
  2. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel.
  3. In a large pot over medium heat, cook onion in oil until onion starts to soften, 5 minutes. Add the garlic at the last minute so it doesn't burn
  4. Pour in tomatoes. Stir, basil, wine, sugar and salt and pepper.Bring to a boil, then reduce heat to low, cover and simmer 2 hours.
  5. At the end use the hand mixer to get it as smooth as you want.
