Vegetarian Mexican Rice

I love Mexican food, actually I should say Tex-Mex food. The mixture of the cumin, the chili, the salsa and the coriander is a really winning combination for me. This recipe can perfectly be made withground meat, but as in the family we do not eat a lot of meat, I replaced that by Original Veggie Ground Round

Instructions
  1. Cook the rice separately
  2. In a large pan, soften pepper and green onions, add corn and rice
  3. Add salsa, taco seasoning, and the pepper and salt. Mix well
  4. Transfer to a baking dish, Cover with the Mexican cheese
  5. Put under the broil for about 5 minutes,
  6. When it's out of the oven, add a coriander on top of the cheese

    This recipe looks delicious! It is simple and I know all the ingredients: ) Since cheese is added at the end, it is easy to have both versions at the same time: vegan (with vegan cheese) and vegetarian.
    I am going to try this recipe.

    I am not familiar with the brand “original veggie ground round”. Whole Foods might have it.

    Hi Sophie
    I tried it. It is easy to make when you get all the ingredients. I was not able to find Original Ground Round at Whole Foods, but I found the product that was very similar to it, I added little more frozen corn and green onion then the recipe suggested, just to add more color. I also learned about corianders” health benefits and how different it is from Italian parsley. Since I was the only one at home to try this recipe, I used vegan cheese, delicious and spicy, the closest to Mexican cheese blend as far as the taste (I got some help from Whole Foods employee), All the ingredients are vegan except the cheese, that is added at the end. So the top layer can have half cheese and half vegan cheese to accommodate people who are vegetarian and also to those who are vegan. I like the recipe and the flavor of this dish.
