Cooking can sometimes take a lot of work. We do not necessarily have all day to spend in the kitchen. Most of my vegan sauces and dips are really quick and simply to make and they last a good 5 days in the

This recipe is absolutely fantastic, honestly no one can know that it does not contain dairy products. I easily serve this sauce to my non-vegan friends and they really love it! Very creamy, it does not have a taste of cashews or a grainy texture.

With the cashew you have a mixture of finely grated cucumber, garlic, lemon juice, salt and pepper! The last, but not least, is dill.

Tzatziki is one of my favorite sauces and looks a lot like yogurt sauce, but I prefer tzatziki because cucumber gives it a special touch. Tzatziki is also ideal for dipping with tortilla chips, eating with falafels or sandwiches, etc. You can eat tzatziki with almost everything

 




Vegan tzatziki sauce

Prep Time: 15 minutes

Yield: 2-4

Vegan tzatziki sauce

Ingredients

  • • 1 ½ soaked cashew ( soaked all night or 4 hours)
  • • 2 tablespoons of hemp seeds
  • • 3 tablespoons lemon juice, freshly squeezed
  • • 1 tablespoon white wine vinegar
  • • 1⁄2 teaspoon salt
  • • 2 -3 garlic cloves, chopped
  • • 2 tablespoons olive oil
  • • pepper, to taste
  • • 1 cucumber, seeded and grated
  • • 1 tablespoon chopped fresh dill (optional) or 1 tablespoon of fresh mint (optional)
  • • water if necessary

Instructions

  1. In a food processor or blender, place cashews, lemon juice, vinegar, garlic cloves, hemp seeds, olive oil, salt and pepper and pour until smooth and creamy. . (You can add the water at the end if you do not have the desired texture.)
  2. Remove from the processor or blender and place the mixture in a large mixing bowl.
  3. Add all other ingredients, diced cucumbers, dill, mint (optional) and more salt / pepper to taste.
  4. Adjust the seasonings as desired.
  5. Cover and refrigerate for at least 2-3 hours.
  6. Serve with salads, falafels or just as a dip for vegetables.
