ASIAN SALAD WITH SPROUTED BEANS AND MANGO

In summer when it’s hot, I love to make nutritious salads. This one is so fresh and crunchy that I had to share it with you. I (still) bought a crate of mangoes (it’s an obsession …) and I was looking for recipes to cook them. So I decide to go with the Asian style salad, you could also use the same ingredients and serve them in spring rolls using the vinaigrette as a dipping sauce I’m sure it will be super delicious too.

ASIAN SALAD WITH SPROUTED BEANS AND MANGO

ASIAN SALAD OF SPROUTED BEANS AND MANGO

  • 4 cups fresh and crisp sprouts
  • 1 red pepper in strips
  • 1 mango cut into cubes
  • About forty coriander leaves
  • 2 tbsp. rice vinegar
  • 2 tbsp. tablespoon maple syrup
  • 1 tsp. mustard
  • 1 cup of vegetable oil
  • Salt (pepper to taste)
  1. In a large salad bowl, combine the sprouts, red peppers, mango and coriander leaves
  2. In a small bowl, combine rice vinegar, maple syrup, mustard and vegetable oil
  3. Add the salad vinaigrette
  4. Correct the seasoning with salt and pepper
  5. Serve immediately
