The freshness of mint in this peas and mint soup is sooo and comforting !
Here is a sweet soup that is as delicious hot as cold, it’s also very quick to prepare, which, you start to know me, is not to displease me. In short, this is my new must have in my repertoire for my busy days.
Since the cooking is very fast, that allows the peas and the mint to keep their beautiful color and their nutrients almost intact. Once mixed, thanks to the magic of coconut milk, this soup is as velvety and creamy as in my wildest dreams
- 2 sliced leek whites
- 2 tbsp. Vegan butter
- 2 tasse frozen green peas
- 15 mint leaves
- 6 cups vegetable broth
- ½ cup coconut milk
- Brown the leek in the butter for 5 minutes .
- Add peas and mint, vegetables broth
- Simmer for about 20 minutes.
- Puree the robot.
- Add the coconut milk.
- Decorate with mint leaves.
